FEDER KNIVES X CHANCE ANIES
When I first talked to Chance Anies, Chef of Tabachoy Philly, he was taking his child to school in the car. He’s a family man and his dedication to the everyday tasks of being a dad is reflected in his food. Tabachoy embodies the warmth of family comfort food, while Chance’s simple yet elegant style reflects his deep love for family. It reminds me of when I first started working in the restaurant business. On my first night working the floor at a small midtown restaurant, the owner pulled me aside and said, 'Just treat everyone the way you’d treat your family and friends, and we’ll do great’.
I appreciate this connection and wanted to make something that would pay homage to what Chance likes to use and emulate what Tabachoy is about.
We designed a 7.5” chopper that's perfect for daily use and dinner prep. AEBL stainless with a blue canvas micarta handle, black bolster and yellow accent with a pink liner and filework that Chance came up with.
A little bit about Chef Chance Anies:
Chance Anies is the chef-owner of a Filipino restaurant in Philadelphia known as Tabachoy. He was awarded Philadelphia Magazine’s Best Chef in 2024. The restaurant began as a food cart, popping up at several establishments and festivals throughout the city. Tabachoy got its name from a Tagalog nickname given to a friend or family member; meaning chubby or fatty. Chance says, “We know it sounds mean, but Filipinos give each other inappropriately appropriate nicknames all the time. Your baby brother’s got some neck rolls? Tabachoy. Auntie’s six months pregnant? Tabachoy. Or your dad’s got a six pack, but just finished his third piece of bibingka? Tabachoy!”
Chance and his team opened a brick-and-mortar in the Bella Vista neighborhood at the end of 2022. In the restaurant, they cook the food that got them made fun of in elementary school when they opened their Country Crock “Tupperware” - the food that reminds them of home. He doesn't strive to make a better adobo than your mother’s, but he does want to share his with you.
The charity that Chance selected for this collaboration is Hope for Kids, which is a local nonprofit with youth programs at a summer camp just outside Philly. The mission is the name - Hope for Kids, a faith-fueled camp empowering lives through mentoring and service. His wife works closely with them, and he grew up going there himself, so it is very near and dear to his heart.
