I wanted to design a chef’s knife based off of a scimitar style butcher knife that we frequently make. I love the audacity of the ‘harpoon clip’ which adds some pizzazz and allows me to add a little more radius at the tip while giving the spine a ‘backbone’ for extra strength on the top third of the blade. The harpoon clip is beveled but is not sharpened.

STEEL: Custom - 3/32” at the thickest part of the spine.
TANG: Full - with decorative filework

Regarding the choice of “Standard” vs “ Unique” handle material as well as steel selection:
There are countless materials and variations in each, our ‘standard’ inventory consists of a great many colors of micarta and G10, as well as a plethora of natural woods that are readily available and sometimes quite distinct. Everything from walnut that we source locally and stabilize ourselves, to flame maple that we pick up around here and there, usually in plank form that we mill down to size.
For our ‘unique’ inventory, think anything that is one of a kind such as dyed burls, resin cast burls and the more expensive hardwoods such as amboyna. You can view examples of other work we have done with these materials HERE. We pick these up at trade shows and from specialty distributors when we see things that we really like. We try to get pictures of everything and put it up HERE but have a lot, so if you want a certain color variation or to get a little funky please choose this selection and let us know in the form that pops up when you place your order. We can also source something for you if necessary.
